This is a brief description of what will be served at the cocktail hour and dinner buffet:

Buffet menu

Braised Trini Lamb: braised lamb shank cutlets, caramelized in olive oil and red wine, tossed with red onions and pimentos

Baked Fish Fillets: baked Marlin fillets served in mustard sauce and capers and sprinkled with grated garlic

Jerk Chicken: smoked jerk chicken portions with honey tamarind sauce

Stewed Pigeon Peas: fresh pigeon peas simmered in smoked olive oil, tomatoes, carrots and coconut milk

Sweet Potato Pie: sweet potato boiled and crushed with pineapple, cheddar cheese, local seasonings, baked with a cheesy crust

Vegetable Rice Pilaf: well seasoned “tossed up” long grain rice pilaf cooked with pumpkin and local colorful vegetables

Tossed Green Salad: lettuce leaves with tomatoes and cucumbers cut in wedges, tossed with green and red cabbage with salad dressing
